Andorra's gastronomy is typical of the high-mountain areas of recognised prestige; with influences from both French and Catalan cuisine. However, one of the distinguishing features of Andorran cuisine is that it has always been linked to the area's local produce and, therefore, conditioned by the seasons. The latter has always meant that it was traditionally considered a self-sustaining cuisine by local society.
If you are a fan of good cuisine, you are in luck, since in Andorra's bordes you can try some of the most traditional dishes. They are a true delight, even for the most demanding palates. These are some of the most prominent dishes:
- Andorran-style cannelloni. This recipe is a variation on the Catalan one. Inside the pasta rolls with béchamel sauce you will find a mixture of lamb, pork and chicken. You'll definitely be licking your fingers after this meal!
- Game meat. Depending on the time of year, you can enjoy meats such as hare or wild boar. To enhance the flavour, they are cooked with mushrooms and vegetables. During fishing season, don't miss out on the river trout. It's delicious!
- Quince aioli. This sauce is made from quince and mixed with aioli. It is a prized accompaniment to grilled meats, as it is the perfect complement.
- Bitter wild chicory. Gathered directly from the mountain, it is an excellent base for making salads. It is usually seasoned with nuts and bacon.
- Cod au gratin. If you are more of a fish fanatic than a meat lover, here's a good option that you're sure to love.
