The Fortnight of the New Canillo Cuisine celebrates its second edition from 19 October to 9 November 2025. This initiative aims to promote local gastronomy, highlighting the use of native products and the reinterpretation of traditional recipes adapted to contemporary tastes.

In this edition, nine restaurants from the parish are taking part with menus specially designed for the occasion. Each establishment offers dishes prepared with local ingredients that showcase Canillo’s agricultural and livestock wealth.

These culinary days are an excellent opportunity to discover the talent of Canillo’s chefs, enjoy a high-quality dining experience, and connect with the roots of the territory through the flavours and products of the region.
